SOY Red wine...
People, Land and the Cosmos...through the vine

Soy represents the union of human, the earth and the cosmos by means of the vine itself. It is the alignment of thinking, feeling and doing, all with the same point of reference.

This wine was initially called "Infinitum", hence the icon shown on the label. It is our most demanding wine in terms of the energy and attention it requires, and the one that best indicates the integration of astrology and other holistic methods within our winery operations.

Soy begins its life in our Madre vineyard, which was planted by Ivan's grandfather more than 80 years ago. This vineyard drives a wonderful Bobal varietal expressiveness due to its distinctive Manchuela terroir: clayey, very deep, and with a high iron content.

Natural Red Wine of 100% Bobal. Soy is vinified 100% naturally without any additives or sulfites, allowing its own primal essence to be expressed in the way it chooses. Beginning with a manual harvest in boxes that allow us to select individual grape bunches in the field, barreling is then done in small containers of 500 liters with daily manual pump-overs of the whole-cluster must. Pressing is extremely gentle by means of a vertical press.

Malolactic fermentation is then carried out in used oak barrels, followed by an aging period of six months. Finally, after a brief filtration the wine is bottled. Because Soy is vinified without fining or cold stabilization, natural sediments may appear in the bottle or glass.

Soy can be enjoyed by all kinds of wine consumers, including vegans and vegetarians.
